Hi Timothy,
The proper way of venting natural draft water heater (assuming that this is what you have) is with a chimney / through the roof. If you are removing that chimney there is nothing else I can recommend… 2-3 days without hot water or postponing dismantling of the chimney until the last possible moment.

I'm selling my checkthishouse.com domain and this website.

I created it in 2001 for my home inspection business so it's a well established property with around 150 home improvement related posts. It also comes with a Youtube channel and a Q&A forum.

Website can be easily adopted for any home inspection / home improvement related business. Makes money on daily basis without even being touched, although it could make much more, I just don't have time to maintain it.

If you're an Illinois based home inspector I'll add http://homeinspectorillinois.com domain to this deal.
